roasted parmesan potatoes
prep time: 10 min | total time: 30 min | serves: 4-5
what you need:
- 1 tbsp olive oil
- 4-5 yellow potatoes
- 2 cloves garlic, minced
- 1/4 cup parmesan, freshly grated
- salt, pepper, parsley
- bacon too, if desired
get it done:
- preheat oven to 400F
- cut potatoes into chunks (about 1 in) and place in a bowl. toss with olive oil, salt, pepper
- scatter over baking sheet and evenly space
- if you’re doing bacon – place it on a a lower rack and bake – remove it when it’s cooked to your liking
- let the potatoes bake for about 20 min, add garlic, toss them around and let them bake for another 5-10 minutes
- grate parmesan over the potatoes and scatter parsley and bacon on top!
